Paleo Sausage and Sage Scones Recipe

This easy recipe is gluten, grain and sugar free and paleo and Whole30 compliant. These scones are a great breakfast or snack on the go and provide a great balance of protein and healthy fats from the combination of almond flour, eggs and sausage. This recipe works well with any sugar, grain and preservative free chicken or pork sausage – I prefer chorizo for this recipe. Here is a great list of compliant sausages from Life Health HQ.

Prep time: 15 minutes; Cook time: 20-25 minutes; Serves: 8

Ingredients

  • 2 C fine ground almond flour (you can also use almond meal for this recipe but it will have a more coarse and crumbly texture)
  • 1/4 C coconut flour
  • 1 tsp baking powder
  • 3 Tbsp or 1 bunch of fresh sage – chopped fine
  • 1 Tsp sea salt
  • 5 ounces of paleo/whole30 compliant uncooked pork or chicken sausage or cooked ground chorizo
  • 1 larg organic free-range egg
  • 2 Tbsp ghee or bacon fat
  • 3 Tbsp organic coconut or almond milk

Instructions

  1. Preheat oven to 375º
  2. For pre-cooked sausage: crumble sausage into small pieces and saute for 5 minuts to brown. Set aside
  3. For uncooked sausage remove sausage casings and crumble into very small pieces, chopping as you go until cooked through and browned. Drain on paper towels and set aside
  4. Combine the flours, baking powder, salt and sage
  5. Beat the egg and add to the four mixture along with the ghee
  6. Add the cooked sausage and stir to combine
  7. Add coconut or almond milk gradually until you have a texture of a dry dough that will hold together when you form into balls with your fingers
  8. Form dough into 8 equal sized ovals and assemble on a greased cookie sheet
  9. Bake at 375º for 20-25 minutes until cooked through and slightly browned
  10. Cool on a wire rack and store in the fridge or freezer
