Paleo Banana Nut Porridge Recipe

This recipe comes together in less than 10 minutes and makes a great breakfast, snack or dessert. It is Vegan, Whole30 and paleo compliant, free of gluten, grains and added sugar and chock full of fiber, vitamins, minerals, protein and healthy fats.

Prep time: 5 minutes; Serves: 4

Ingredients

  • 2 medium very ripe bananas (I love to freeze very ripe bananas in their peel and defrost for use in recipes like this one but fresh also work here)
  • 1/2 C organic dried dates
  • 2 C of nuts of your choice (toasted or raw – your choice) – I like almonds, cashews and pecans
  • 1 tbsp Tahitian vanilla extract or powder
  • 1 tsp sea salt (use less if your nuts are salted)
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Optional toppings: 1 tbsp cacao or cocoa powder, toasted coconut, chopped nuts and/or sliced bananas
  • 1.5 C organic unsweetened coconut (regular or reduced fat will work), almond, cashew or hemp milk

Instructions

  1. Put all ingredients into a food processor and blend until you reach a porridge consistency (2 minutes or so)
  2. Store in an air-tight container in the fridge and heat in a small pot on the stove before eating – also is great cold or room temperature
