One large muffin has 8.8 grams of fiber &#8211; 38% of the recommended daily value!<\/p>\n<p>Serves: 11 large muffins or 22 small<\/p>\n<p>Weight Watchers SmartPoints: 8SP for large, 4SP for small<\/p>\n<h2><span style=\"color: #800080;\">Ingredients<\/span><\/h2>\n<p><strong><span style=\"color: #800080;\">Dry<\/span><\/strong><\/p>\n<ul>\n<li>1 C Bob&#8217;s Red Mill gluten-free Mighty Tasty Hot Cereal<\/li>\n<li>1\/2 C freeze dried pears or apples \u2013 pur\u00e9ed in the blender to powder (you can get these at Whole Foods, Trader Joe&#8217;s or Ocean State Job Lot)<\/li>\n<li>1 C gluten free flour blend<\/li>\n<li>\u00bd C buckwheat groats<\/li>\n<li>\u00bc C black chia seeds<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1 tsp salt<\/li>\n<li>1 1\/2 tsp cinnamon<\/li>\n<li>1 1\/2 tsp nutmeg<\/li>\n<\/ul>\n<p><span style=\"color: #800080;\"><strong>Wet<\/strong><\/span><\/p>\n<ul>\n<li>1 ripe banana, mashed<\/li>\n<li>1 C pur\u00e9ed jarred pears with the juice drained<\/li>\n<li>\u00bd C buttermilk, soy milk, nut milk or plain kefir<\/li>\n<li>4 organic egg whites or 2 large organic eggs<\/li>\n<li>1\/4 C blackstrap molasses<\/li>\n<li>1\/4 C honey or maple syrup<\/li>\n<li>1 tsp Tahitian vanilla extract<\/li>\n<li>1 tsp pear extract &#8211; optional<\/li>\n<\/ul>\n<p><strong><span style=\"color: #800080;\">Fruits and Nuts<\/span><\/strong><\/p>\n<ul>\n<li>1 large ripe pear, diced<\/li>\n<li>1\/2 C dried cherries<\/li>\n<li>1\/2 &#8211; 1 C chopped pecans<\/li>\n<\/ul>\n<h2><span style=\"color: #800080;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignleft size-medium wp-image-838\" src=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2017\/03\/17270783_10155054701118077_417281696_n-e1489264028175-300x207.jpg?resize=300%2C207\" alt=\"17270783_10155054701118077_417281696_n\" width=\"300\" height=\"207\" srcset=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2017\/03\/17270783_10155054701118077_417281696_n-e1489264028175.jpg?resize=300%2C207&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2017\/03\/17270783_10155054701118077_417281696_n-e1489264028175.jpg?w=682&amp;ssl=1 682w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Instructions<\/span><\/h2>\n<ol>\n<li>Preheat your oven to 375F and line your muffin tins with paper cups or coat with cooking spray<\/li>\n<li>In a large bowl combine dry ingredients and whisk until well incorporated and set aside<\/li>\n<li>In a separate bowl, mash banana with a fork, until almost frothy in consistency.<\/li>\n<li>\u00a0Add the rest of the wet ingredients and whisk until well blended<\/li>\n<li>Pour into dry ingredients and stir with a wooden spoon or spatula until well combined, then fold in pears, nuts and cherries<\/li>\n<li>Pour mixture into prepared pan<\/li>\n<li>Bake for 25-30 minutes until tops look nice and crunchy and a toothpick inserted comes out clean.<\/li>\n<li>Allow to cool for 5 minutes before removing from the pan and then place on on a wire rack until they reach room temperature<\/li>\n<li>Store in an airtight container for up to 5 days<\/li>\n<\/ol>\n<p>Enjoy!<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Pear and Cherry Bran Muffin Recipe These gluten-free muffins are chock full of healthy ingredients &#8211; high in iron, fiber, protein and vitamins, they will keep you full for hours!
