But one of her favorites that she still makes time and time again for family, bake sales and just for fun is Appleanna Bread (that&#8217;s apple banana bread for the uninitiated). My nephews have shortened it appropriately to &#8220;Nanny&#8217;s Bread&#8221; and they love it just as much as she does.<\/p>\n<p>But for the last many years since I have been gluten-free I have not been able to partake &lt;inserts sad emoji face&gt;. That all changed last week when I finally got around to asking her for her recipe so that I could adapt it to be gluten-free. She said she would scan it and send to me; my mom is old school and most of her recipes are still on index cards.<\/p>\n<p>The email arrived the next day and was I in for a surprise when I opened the attachment (see below). You may notice the rather girly and somewhat childish scrawl as much as the time-worn and well-loved index card it is written on. You may also notice the &#8220;e&#8221; missing from &#8220;shortening&#8221;. I thank my lucky stars every day for spell check!<\/p>\n<p>I am also a little horrified that I used shortening at all, but somehow mollified by the fact that at some point I changed &#8220;eggs&#8221; to &#8220;eggbeaters&#8221;\u00a0(a change I would never make today but still applaud my younger self in her quest for health).\u00a0It is amazing how much we have learned about good nutrition in the last 30 years!<\/p>\n<p>So without further adieu, I give you the 2016 version of Mom&#8217;s Appleanna Bread (less sugar, less fat, more protein and fiber, and as always with substitutions for paleo and vegan). Enjoy!<\/p>\n<p>&nbsp;<\/p>\n<h2><span style=\"color: #800080;\">Beth&#8217;s Gluten-Free Appleanna Bread Recipe<\/span><\/h2>\n<div>Prep time: 20 minutes; Cook time: 40-60 minutes; Total time: 60-80 minutes; Serves: 16-24 depending on how thick you cut the slices!<\/div>\n<div><\/div>\n<h4><span style=\"color: #800080;\">Ingredients<\/span><\/h4>\n<ul>\n<li><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-605 size-medium\" src=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12965999_10154033727368077_1668954678_n-e1460149386777-300x253.jpg?resize=300%2C253\" alt=\"12965999_10154033727368077_1668954678_n\" width=\"300\" height=\"253\" srcset=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12965999_10154033727368077_1668954678_n-e1460149386777.jpg?resize=300%2C253&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12965999_10154033727368077_1668954678_n-e1460149386777.jpg?resize=768%2C649&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12965999_10154033727368077_1668954678_n-e1460149386777.jpg?w=774&amp;ssl=1 774w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>1\/4 C butter \u00a0\u00a0<em>use margarine sticks or coconut oil in solid form for vegan<\/em><\/li>\n<li>3\/4 C sugar\/coconut sugar\u00a0<em> use\u00a01\/2 C maple syrup or honey for paleo<\/em><\/li>\n<li>2 large organic eggs \u00a0\u00a0<em>use chia\/flax seed egg substitute for vegan<\/em><\/li>\n<li>1\/2 C unsweetened applesauce<\/li>\n<li>1.5 tsp vanilla \u00a0\u00a0<em>use vanilla powder for strict paleo or omit<\/em><\/li>\n<li>2 very ripe bananas (I like to freeze very ripe bananas and then defrost for banana bread)<\/li>\n<li>2 1\/4 C gluten-free flour blend (I used Cup4Cup) \u00a0\u00a0<em>substitute 1 1\/2 C almond flour and 1\/2 C coconut flour for paleo and increase eggs to 3<\/em><\/li>\n<li>1 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1 tsp sea salt<\/li>\n<li>1 tsp cinnamon<\/li>\n<li>1\/2 tsp fresh ground nutmeg<\/li>\n<li>2 C chopped apples &#8211; peeled or not, your choice<\/li>\n<li>1\/2 C chopped walnuts<\/li>\n<li>1\/2 C chopped pecans (or all walnuts or all pecans, whichever you have on hand)<\/li>\n<\/ul>\n<h4><span style=\"color: #800080;\">Instructions<\/span><\/h4>\n<ol>\n<li>Pre-heat oven to 350\u00b0<\/li>\n<li>In a large bowl, cream\/beat butter and sugar with a wooden spoon until your arm gets tired.<\/li>\n<li>Add eggs, banana, vanilla and applesauce. Mix some more.<\/li>\n<li>Add dry ingredients. Mix a little more.<\/li>\n<li>Stir in apples and nuts. Stir to combine.<\/li>\n<li>Pour into 2 greased loaf pans or 6 mini loaf pans (grease the baby ones too).<\/li>\n<li>Bake for for 40-60 minutes depending on the size of your pan &#8211; remove when a knife or toothpick inserted into the center comes out clean.<\/li>\n<\/ol>\n<div><span style=\"color: #800080;\"><em>Cook&#8217;s Note: In a tribute to my former self, I left the directions super simple and kinda vague &#8211; just like my Nanny taught me!<\/em><\/span><\/div>\n","protected":false},"excerpt":{"rendered":"<p>Just like mom used to make!
