There really is nothing better than melted cheese dip, served with warm corn tortillas. So I took the basic queso recipe and kicked it up a notch with roasted cauliflower, onions and shallots and spicy Portuguese chorizo sausage. The best part &#8211; you can almost convince yourself that it is a really healthy snack thanks to the cauliflower! (Hey we all can afford to indulge a little now and again!)<\/p>\n<h2><span style=\"color: #800080;\">Cauliflower Chorizo Queso Fundito Recipe<\/span><\/h2>\n<p>Prep time: 10 minutes; cook time: 30 minutes for cauliflower and then 30 minutes for completed dish; total time: 1 hour 10 minutes; Serves: 12 as an appetizer<\/p>\n<h4><span style=\"color: #800080;\">Ingredients<\/span><\/h4>\n<ul>\n<li>1 large head of cauliflower &#8211; cut into small florets<\/li>\n<li>2 medium onions &#8211; peeled and diced<\/li>\n<li>4 medium shallots &#8211; peeled and diced<\/li>\n<li>2 tbsp of olive or grape seed oil<\/li>\n<li>Salt an pepper to taste<\/li>\n<li>12 ounces of fully cooked gluten-free chorizo sausage (I like <a href=\"http:\/\/www.wellshirefarms.com\/gluten-free-foods\" target=\"_blank\">Wellshire Farms brand<\/a>\u00a0sold at Whole Foods due to their use of natural ingredients and attention to Celiac)<\/li>\n<li>1 pound of shredded cheese &#8211; mix of any\/all of these: cheddar, Asiago, Fontina\u00a0and Monterey\u00a0jack<\/li>\n<li>1\/2 bunch of cilantro &#8211; washed and chopped, stems and all<\/li>\n<li>Corn tortillas or tortilla chips for serving &#8211; make sure you read the labels as not all are gluten-free!<\/li>\n<\/ul>\n<h4><span style=\"color: #800080;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-551 size-medium\" src=\"https:\/\/i0.wp.com\/pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12966713_10154025892328077_834564550_n-e1459883077588-300x296.jpg?resize=300%2C296\" alt=\"12966713_10154025892328077_834564550_n\" width=\"300\" height=\"296\" srcset=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12966713_10154025892328077_834564550_n-e1459883077588.jpg?resize=300%2C296&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12966713_10154025892328077_834564550_n-e1459883077588.jpg?resize=768%2C758&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/04\/12966713_10154025892328077_834564550_n-e1459883077588.jpg?w=928&amp;ssl=1 928w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Instructions<\/span><\/h4>\n<ol>\n<li>Pre-heat oven to 425\u00b0<\/li>\n<li>Add cauliflower, onions and shallots to a heavy roasting pan or cookie sheet and toss with oil, salt and pepper and roast until caramelized, stirring several times so that the onions do not burn &#8211; about 30 minutes.<\/li>\n<li>Chop the chorizo into small dice and saute in a large heavy bottomed pan, stirring frequently, until sausage has browned somewhat, about 6-8 minutes. Drain sausage on paper towels and set aside.<\/li>\n<li>In a large bowl, combine roasted vegetables, chorizo, cheese and chopped cilantro. Stir to combine.<\/li>\n<li>Pour mixture into a deep souffle dish or casserole dish and cook at 375\u00b0 for 30 minutes until the top is browned and bubbly. Serve immediately with warm corn tortillas* or tortilla chips.<\/li>\n<\/ol>\n<p>*To warm tortillas wet a bunch of paper towels with water and squeeze out until just damp.
