Light, moist, and fragrant with just a little bit of sugary crunch, these muffins are chock full of fiber, protein, potassium, magnesium, Vitamin B6 and Vitamin A to get your day started off right!<\/p>\n<h4><span style=\"color: #800080;\"><strong>\u00a0Ingredients<\/strong><\/span><\/h4>\n<ul>\n<li>1\/4 C packed dark brown sugar<\/li>\n<li>2 tsp high quality ground cinnamon &#8211; divided<\/li>\n<li>2 tsp fresh grated nutmeg &#8211; divided<\/li>\n<li>1\/2 tsp allspice<\/li>\n<li>2 C gluten-free flour blend (I like Cup4Cup or Authentic Foods)<\/li>\n<li>1\/2 C sugar<\/li>\n<li>2 tsp baking powder<\/li>\n<li>1 tsp baking soda<\/li>\n<li>1 tsp salt<\/li>\n<li>1 1\/4 C chopped dried plums (shhhhh&#8230;we do not need to actually call them prunes!)<\/li>\n<li>1 1\/3 C chopped walnuts &#8211; divided<\/li>\n<li>1 large organic egg<\/li>\n<li>1 large organic egg yolk<\/li>\n<li>1 C greek yogurt &#8211; 2% or whole milk<\/li>\n<li>8 tablespoons organic butter, melted &#8211; divided<\/li>\n<li>6-8 tbsp milk (cow, nut, soy, seed &#8211; your choice)<\/li>\n<li>2 tbsp tahitian vanilla<\/li>\n<\/ul>\n<h4><strong><span style=\"color: #800080;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-417\" src=\"https:\/\/i0.wp.com\/pixiedustgourmet.com\/wp-content\/uploads\/2016\/02\/12767229_10153891841948077_372855006_n-e1456500820729-300x227.jpg?resize=300%2C227\" alt=\"12767229_10153891841948077_372855006_n\" width=\"300\" height=\"227\" srcset=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/02\/12767229_10153891841948077_372855006_n-e1456500820729.jpg?resize=300%2C227&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/02\/12767229_10153891841948077_372855006_n-e1456500820729.jpg?resize=768%2C581&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2016\/02\/12767229_10153891841948077_372855006_n-e1456500820729.jpg?w=873&amp;ssl=1 873w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Instructions<\/span><\/strong><\/h4>\n<ol>\n<li>Preheat oven to 375\u00ba<\/li>\n<li>Grease 6 jumbo muffin tins or 5 mini tart pans or use paper liners<\/li>\n<li>Stir together brown sugar, 1 tsp cinnamon, 1 tsp nutmeg, 2 tbsp melted butter and 2\/3 C chopped walnuts for topping and set aside<\/li>\n<li>Stir rest of dry ingredients together &#8211; flour, sugar, spices, baking powder, baking soda, salt<\/li>\n<li>Add chopped prunes and remaining walnuts to flour mixture<\/li>\n<li>In stand mixer fitted with the paddle attachment or a large bowl with a whisk and some serious elbow grease, mix wet ingredients until smooth (You can also use a hand beater, electric beater or an immersion blender &#8211; the choices are endless!)<\/li>\n<li>Add dry mixture to wet and stir well to combine (don&#8217;t worry the batter will be thick and lumpy- use a little more milk if it is too thick to stir)<\/li>\n<li>Fill muffin tins or tart pans almost to the top and sprinkle with topping mixture<\/li>\n<li>Bake 22-26 minutes or until toothpick inserted into the center comes out clean<\/li>\n<\/ol>\n<p><span style=\"color: #800080;\">Enjoy!<\/span><\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Gluten-free Plum Walnut Cakes\u00a0 A shout out to Andrea&#8217;s Kitchen for the inspiration for this recipe!
