With almost endless variations, they make a flavorful home-style meal any night of the week. The basic recipe and instructions are below, along with eight different variations &#8211; so you can have meatballs every night of the week and twice on Sunday! All recipe variations are gluten-free and there are options for those omitting grains and dairy as well (Paleo and Whole30).<\/p>\n<p>Prep Time: 20 minutes; Cook time: 20 minutes; Total time: 40 minutes<br \/>\nServes: 4-6<\/p>\n<h2><span style=\"color: #800080;\">Ingredients<\/span><\/h2>\n<ul>\n<li>Protein: 2 lbs of ground organic chicken, turkey, beef, lamb and\/or pork<\/li>\n<li>Aromatics: 1 C (approximately 1 large) onion. finely chopped, and 3 cloves of crushed garlic<\/li>\n<li>Spices and Fresh Herbs: 2 tsp each of salt and pepper, 1 tbsp each of garlic and onion powder and additional spices and herbs according to variations below<\/li>\n<li>Binders: 1.5 C gluten-free or grain-free bread crumbs (<a href=\"http:\/\/www.pixiedustgourmet.com\/personal-chef-Boston\/2018\/05\/23\/paleo-bread-crumbs\/\">paleo\/grain-free bread crumb recipe here<\/a>) and 2 organic large eggs<\/li>\n<\/ul>\n<h2><span style=\"color: #800080;\">Instructions<\/span><\/h2>\n<ol>\n<li>Heat oven to 375\u00b0<\/li>\n<li>Beat eggs in a large bowl<\/li>\n<li>Add all other ingredients and mix with your hands to combine well<\/li>\n<li>Wet your hands and then roll mixture into 2-inch balls and place on a cookie sheet lined with parchment paper<\/li>\n<li>Cook meatballs until firm to the touch, about 15 minutes<\/li>\n<li>While meatballs are cooking, make sauce (see variations below)<\/li>\n<li>Remove from the oven and add to the sauce below per instructions<\/li>\n<\/ol>\n<h2><span style=\"color: for Paleo)<\/li>\n<li>1-2 tbsp fresh grated nutmeg<\/li>\n<\/ul>\n<\/li>\n<li>Sauce Instructions:\n<ul>\n<li>Combine all ingredients and whisk for 5 minutes on medium<\/li>\n<li>Add meatballs to sauce and cook on low for 5-10 minutes<\/li>\n<\/ul>\n<\/li>\n<li>Noodles: Serve with gluten-free egg noodles, sweet potato noodles or spaghetti squash<\/li>\n<\/ul>\n<p><strong>Spanish Guava Tomato<\/strong><\/p>\n<ul>\n<li>Protein: 2 lbs pork or 1 lb pork and 1 lb chicken, turkey or beef<\/li>\n<li><span style=\"line-height: inherit;\">Sauce Ingredients:<\/span>\n<ul>\n<li>1 C chopped onion<\/li>\n<li>3 cloves crushed garlic<\/li>\n<li>1 29-ounce can of fire roasted crushed or diced organic tomatoes<\/li>\n<li>8 ounces of guava juice (no sugar added)<\/li>\n<li>1 jar of guava jelly or 4 ounces of guava paste (use 100% fruit spread for Paleo)<\/li>\n<li>2 tsp sea salt and pepper<\/li>\n<li>1 tbsp each of garlic powder and onion powder<\/li>\n<\/ul>\n<\/li>\n<li>Sauce Instructions:\n<ul>\n<li>In a large stockpot saute onion and garlic in olive oil until translucent<\/li>\n<li>Add tomatoes, guava juice, guava jelly or paste and\u00a0spices<\/li>\n<li>Cook until guava jelly or paste is melted<\/li>\n<li>Puree with an immersion blender<\/li>\n<li>Add meatballs to sauce and cook on low for 5-10 minutes<\/li>\n<\/ul>\n<\/li>\n<li>Noodles: Serve with noodles of finely chopped cilantro and a 2 inch piece of fresh grated ginger<\/li>\n<li>Sauce Ingredients:\n<ul>\n<li>2 C chicken broth<\/li>\n<li>1\/4 C tamari or coconut aminos<\/li>\n<li>2 inch piece of fresh grated ginger root<\/li>\n<li>1\/8 C sesame oil<\/li>\n<li>Sriratcha sauce to taste<\/li>\n<li>2 C Chinese broccoli, chopped into bite size pieces<\/li>\n<li>Sesame seeds, and additional chopped scallions and cilantro for serving<\/li>\n<\/ul>\n<\/li>\n<li><span style=\"line-height: inherit;\">Sauce Instructions:<\/span>\n<ul>\n<li>In a large stock pot or dutch oven combine chicken broth, tamari, ginger root, sesame oil and Sriratcha and whisk until hot<\/li>\n<li>Add Chinese broccoli and cook until lightly steamed but still crunchy, about 5 minutes<\/li>\n<li>Add meatballs to sauce and cook on low for 5 minutes<\/li>\n<li>Top with sesame seeds and additional chopped scallions and cilantro<\/li>\n<\/ul>\n<\/li>\n<li>Noodles: Serve with glass rice or sweet potato noodles<\/li>\n<\/ul>\n<p><strong>Lamb with Tzatziki<\/strong><\/p>\n<ul>\n<li>Proteins: 2 lbs ground lamb<\/li>\n<li>Additional Spices and Fresh Herbs: 1\/2 bunch fresh mint and 2 tbsp fresh oregano, chopped<\/li>\n<li>Sauce Ingredients:\n<ul>\n<li>2 C Greek yogurt (cashew or coconut milk yogurt for Paleo)<\/li>\n<li>1-2 tbsp fresh lemon juice<\/li>\n<li>1 C peeled and diced cucumber<\/li>\n<li>1\/2 bunch fresh mint, chopped<\/li>\n<li>2-4 cloves pressed garlic<\/li>\n<li>salt and pepper to taste<\/li>\n<\/ul>\n<\/li>\n<li>Sauce Instructions: Mix all ingredients to Ingredients:\n<ul>\n<li>1 jar of your favorite buffalo sauce<\/li>\n<li>1\/4 stick butter, ghee or plant-based spread (optional)<\/li>\n<li>1\/4 C honey (omit for Whole30)<\/li>\n<li>1 tsp salt<\/li>\n<li>Chopped scallions and additional chopped cilantro for serving if desired<\/li>\n<\/ul>\n<\/li>\n<li>Sauce Instructions:\n<ul>\n<li>Add all ingredients to a stockpot or large dutch oven and heat, stirring with a whisk until bubbly<\/li>\n<li>Add meatballs to sauce and cook on low for 5-10 minutes<\/li>\n<\/ul>\n<\/li>\n<li>Noodles: Serve with carrot noodles and blue cheese crumbles<\/li>\n<\/ul>\n<p><strong>Chicken Cordon Bleu<\/strong><\/p>\n<ul>\n<li>Proteins: \u00a02 lbs ground chicken, 1\/2 lb good quality ham, chopped and 1\/4 lb shredded swiss cheese (for Paleo omit cheese or use cashew mozzarella)<\/li>\n<li>Additional Spices and Fresh Herbs: 1\/4 C chopped parsley<\/li>\n<li>Sauce Ingredients:\n<ul>\n<li>2 tbsp olive oil and 2 tbsp flour of your choice (use potato starch for Paleo)<\/li>\n<li>1.5 C organic chicken broth<\/li>\n<li>1\/4 C dry white wine (omit for Paleo)<\/li>\n<li>3 tbsp Dijon mustard<\/li>\n<li>1-2 tsp honey<\/li>\n<li>Sea salt and pepper to taste<\/li>\n<li>1-2 tsp lemon juice<\/li>\n<\/ul>\n<\/li>\n<li>Sauce Instructions:\n<ul>\n<li>Make a roux with the oil and flour and cook until light golden, about 5 minutes<\/li>\n<li>Add wine and broth and cook for 5 minutes on medium, whisking constantly<\/li>\n<li>Add all other ingredients and whisk until bubbling and thickened<\/li>\n<li>Add meatballs and cook on low for 5 minutes<\/li>\n<\/ul>\n<\/li>\n<li>Noodles: Serve with gluten-free pasta, lentil noodles or mashed potatoes<\/li>\n<\/ul>\n<p><strong>Moroccan with Kale Apricot Pesto<\/strong><\/p>\n<ul>\n<li>Proteins: 2 lbs chicken, beef, turkey or a combination<\/li>\n<li>Additional Spices and Fresh Herbs: 1\/8 C of pesto (see recipe below) and 1\/4 C cilantro and\/or mint, chopped<\/li>\n<li>Pesto Ingredients:\n<ul>\n<li>2 C washed and torn kale leaves<\/li>\n<li>10-15 dried apricots<\/li>\n<li>4 cloves pressed garlic<\/li>\n<li>1\/8-1\/4 C fresh lemon juice<\/li>\n<li>1\/4 C EVOO<\/li>\n<li>salt and pepper to taste<\/li>\n<li>1\/2 C raw or toasted walnuts<\/li>\n<\/ul>\n<\/li>\n<li>Sauce Instructions:\n<ul>\n<li>Combine all ingredients in a food processor and blend until it forms a paste &#8211; adding additional EVOO if needed<\/li>\n<li>Reserve 1\/8 C for meatballs and toss cooked meatballs in remaining pesto before
