It is a healthy, gluten-free vegan dish that is chock full of vitamins, minerals, fiber, healthy fats and protein. If you would like a paleo and legume-free version, substitute 2 lbs of shrimp or chicken for the chickpeas. For whole-food plant-based, just substitute water for the oil. While the list of ingredients may seem long, this salad is a snap to put together and all of the ingredients can be found in your local grocery store.<\/p>\n<p>Serves: 6 as a main meal and 10 as a side dish<br \/>\nPrep time: 15 minutes<\/p>\n<h2><span style=\"color: #800080;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignright size-medium wp-image-1733\" src=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2018\/07\/0386F1F5-FD21-452E-B644-FA3EDB6880E5-300x225.jpeg?resize=300%2C225\" alt=\"\" width=\"300\" height=\"225\" srcset=\"https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2018\/07\/0386F1F5-FD21-452E-B644-FA3EDB6880E5.jpeg?resize=300%2C225&amp;ssl=1 300w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2018\/07\/0386F1F5-FD21-452E-B644-FA3EDB6880E5.jpeg?resize=768%2C576&amp;ssl=1 768w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2018\/07\/0386F1F5-FD21-452E-B644-FA3EDB6880E5.jpeg?resize=1024%2C768&amp;ssl=1 1024w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2018\/07\/0386F1F5-FD21-452E-B644-FA3EDB6880E5.jpeg?w=1420&amp;ssl=1 1420w, https:\/\/i0.wp.com\/www.pixiedustgourmet.com\/wp-content\/uploads\/2018\/07\/0386F1F5-FD21-452E-B644-FA3EDB6880E5.jpeg?w=2130&amp;ssl=1 2130w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/>Ingredients<\/span><\/h2>\n<ul>\n<li>2 cans organic chickpeas &#8211; rinsed and drained<\/li>\n<li>3 tbsp curry powder &#8211; divided (I recommend <a href=\"https:\/\/www.penzeys.com\/\">Penzeys<\/a>&#8216; Sweet Curry or Now Curry)<\/li>\n<li>2 tbsp brown\/black mustard seeds<\/li>\n<li>2 heads organic Savoy cabbage- washed and sliced thin<\/li>\n<li>1 red pepper &#8211; sliced in thin strips then chopped<\/li>\n<li>1 lb carrots &#8211; shredded<\/li>\n<li>1 bunch of scallions &#8211; washed and chopped<\/li>\n<li>Bunch of cilantro &#8211; washed well<\/li>\n<li>Bunch of mint &#8211; washed and stems removed<\/li>\n<li>1 jalapeno &#8211; optional<\/li>\n<li>6 tbsp fresh lime juice<\/li>\n<li>1 tsp salt<\/li>\n<li>4 cloves garlic<\/li>\n<li>1-inch pice of ginger, peeled and minced very fine<\/li>\n<li>3 tbsp honey or to taste<\/li>\n<li>1 C cashews &#8211; roasted and salted or raw &#8211; your choice<\/li>\n<li>1\/3 C dried currants or barberries (optional)<\/li>\n<li>4 tbsp olive or coconut oil &#8211; divided (substitute water for the oil for whole-food plant-based)<\/li>\n<\/ul>\n<h2><span style=\"color: #800080;\">Instructions<\/span><\/h2>\n<ol>\n<li>Drain and rinse chick peas and toss with 2 tbsp curry powder and mustard seeds in a bowl<\/li>\n<li>Saute chick peas in 2 tbsp of oil a large saute pan until golden and mustard seeds begin to pop<\/li>\n<li>Turn of heat and set aside<\/li>\n<li>Dressing: in a blender of food processor, combine the remaining 1 tbsp curry powder, mint, cilantro, honey, remaining 2 tbsp oil, lime juice, garlic, ginger, salt and jalapeno if using and blend until smooth<\/li>\n<li>In a very large bowl, add chopped cabbage, peppers, scallions and shredded carrots and toss with the dressing until well combined<\/li>\n<li>Add the chickpeas, cashews and currants or barberries if using and toss again<\/li>\n<li>Serve cold or room temperature &#8211; and it \u00a0is even better 1-2 days later<\/li>\n<\/ol>\n<p>Enjoy!<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Indian Cabbage Salad Recipe This unique cold summer salad serves 6 as a main meal or 10 as a side dish.
