Peanut Butter Banana Protein Muffins Recipe

These fabulous and easy muffins are grain, dairy and sugar-free*, with a low glycemic load and high protein and fiber!
11g of protein and 5g of fiber per serving
*trace amount of sugar and Stevia in protein powder and PB fit

Ingredients

  • 1 C PB Fit or PB2 (chocolate or regular)
  • 6 scoops of Orgain vanilla or chocolate protein powder
  • 1/2 C water – more as needed
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/3 C peanut butter
  • 1 tbsp Tahatian or Bourbon vanilla
  • 2 egg beaters (6 tbsp) or 4 organic egg whites
  • 3 medium or 4 large ripe bananas – mashed
  • 1/2 C freeze dried banana puréed to a powder (1 2-ounce package)

Optional

  • 1/4 C chocolate chips (add 1SP per serving)
  • 1/2 C peanuts (add 1SP per serving)
  • 1/4 C honey (add 1SP per serving)

Directions

  1. Combine PB Fit, baking powder, salt and Orgain protein powder in a bowl with just enough water to form a thick batter the consistency of peanut butter and beat until smooth
  2. Add peanut butter and freeze dried banana powder and beat until well combined
  3. In another small bowl, mash banana
  4. Add banana, eggs and vanilla and beat until well combined
  5. Add optional ingredients as desired and stir to combine
  6. Spray 12 muffin tins with cooking spray and fill
  7. Bake at 390° for 16-20 minutes until set and a toothpick inserted into the center comes out clean
